Schab pieczony
z suszonymi sliwkami
Skladniki:
4 1/2 schabu, 3 lyzki margaryny,
0.25lb suszonych sliwek, 1/2 lb jablek,
1 pomarancza, 2 cebule, sól i pieprz do smaku.
Schab umyc, natrzec sola i pieprzem, pozostawic na
ok. 1 godzine. Mieso podzielic na dwie czesci, kazda nakluc szpikulcem umieszczajac w srodku suszone sliwki. Margaryne rozpuscic w brytfannie, wlozyc schab i piec w piekarniku na malym ogniu, systematycznie polewajac sciekajacym sosem. Po uplywie godziny oblozyc schab plasterkami cebuli i cwiartkami jablek, ponownie polac sosem. Gdy schab zmieknie (po ok. póltorej godz.) wyjac, pokroic w plastry, wylozyc na pólmisek, udekorowac pieczonymi jablkami i po-maranczmi, polac sosem. Podawac z ziemniakami albo kluskami z dodatkiem buraczków lub kapusty.
Pork Joint Roast
with Dried Plums

4 1/2 lb of pork
3 tablespoons margarine
100g dried plums
250 apples
1 orange
2 onions, salt and pepper.
Clean and rinse the meat, rub with salt and pepper, and leave for about 1 hour. Divide the meat into two pieces, pierce each with a skewer and place the dried plums inside. Melt the margarine on a baking tray, spread the meat and roast in the oven on a low heat, basting once in a while. After an hour, cover the meat with anion slices and apple quarters, then baste it again. After about 1.5 hours, when the meat is tender, slice it and place on a plate, garnishing it with the baked apples and oranges. Pour the sauce on top. Serve with potatoes or noodles and with cabbage or beetroots.
